Apple bread
Inundated with apples, I am trying to find ways of using them in a variety of recipes, so that we don't get bored with eating them. Yesterday I baked an apple bread. Our apples are eaters, they are crispy and tart bordering on sour. Though they are lovely in salads, I still prefer using them in cooking.
Apple bread
Ingredients:
2 medium eggs
250g caster sugar
450g self-raising flour
1tsp baking powder
a pinch of salt
1/2tsp cinnamon
1/3tsp ground cloves
1/3tsp ground ginger
125ml vegetable oil (I used grapeseed oil)
2 medium apples, peeled and chopped
The variety of apples I used are quite sour, so if you are using sweet apples, you might want to cut down the amount of sugar to under 200g or less.
Beat the eggs with caster sugar in a medium-sized mixing bowl. Add the flour, baking powder, salt, spices and oil and mix well. The cake batter is rather thick. Peel and chop the apples, add to the cake batter and mix well. Spoon the cake mix into an oiled loaf tin.
Place it in the oven preheated to 180C. Bake for 50+ minutes. I covered the loaf with a foil after 30 minutes of baking as the top was quite well browned while the middle was still wobbly and uncooked. Check readiness with a wooden toothpick.
Serve warm or cold. It is delicious with a cup of tea or coffee.

DeleteMy goodness - This sounds amazing! Ive booked marked it for me to try out. I will have to change the egg ingredient because of Hayden allergies but I'm sure it will taste just as nice.

Thank you Charlotte, I've seen some eggless apple cake recipes where the eggs were swapped for applesauce or molasses, but I haven't tried this method.
